What is a Dolma or Mahashi
- Dolma is a famous dish in the Middle East, Balkan, and some parts of Central Asia. The word “Dolma” comes from the Turkish “Dolmak” that means “stuffed” or “filled”. The dish is usually composed of vegetables such as tomatoes, eggplants, pepper, or zucchini which are hollowed out and stuffed with a mix of rice, herbs and sometimes minced meat.
- There are several types of dolma according to the region and ingredients used. In Greece, for example, dolma is often made of grape leaves and stuffed with a mix of rice, herbs, and sometimes minced meat. In Turkey, dolma can be made of a group of vegetables and often served with yogurt or tomato sauce.
- In addition to vegetable version, there is also the meat one known as “Sarma” that is composed of minced meat, rice and spices and wrapped with grape or cabbage leaves. Vegetarian varieties of Sarma can also be made with ingredients like mushroom or lentils.
