How to Prepare Vegetable Soup
- Heat olive oil in a big saucepan over medium heat. Add minced onion, and crushed garlic. Fry them until the onions become translucent.
- Add chopped carrots and celery. Fry for about 5 minutes
- Add dried oregano, basil, thyme and bay leaf. Fry for one minute.
- Add vegetable broth and tomato cubes with their juices
- Boil the mixture on a low fire; leave it for 10 minutes
- Add chopped vegetable and let simmer for extra 10 – 15 minutes
- Add salt and pepper to taste
- Remove bay leaves before serving
- Vegetable soup is now ready for serving.
