How to Prepare Turkish Delight

  • Grease a tray with butter or cooking spray and leave it aside.
  • In a medium saucepan, mix sugar with water. Boil the mixture over medium to high heat while stirring from time to time to dissolve sugar.
  • Once the sugar is dissolved, reduce the heat to a medium-low and leave to boil for about 20 – 25 minutes or until the mixture reaches the tender ball stage.
  • While sugar syrup is boiling, whisk the cornstarch and tartar cream together in a separate bowl, until well combined.
  • As soon as sugar syrup reaches desired temperature, take it off the heat and stir the cornstarch mixture until it is fully blended.
  • Return the mix to fire again and cook while continuously stirring for another 10 – 15 minutes or until the mixture thickens and becomes transparent.
  • Remove the mixture from heat then add rose water and food colorant. You can also add chopped pistachios or almonds in this stage if you wish to.
  • Pour the mixture into a tray, smooth the its surface with a spoon, leave to cool at room temperature for at least 4 hours or overnight until fully dry.
  • Once it reaches the desired consistency, immerse your knife in powdered sugar and cut into the shape you like.
