How to Prepare Vegetable Soup

  • Heat olive oil in a big saucepan over medium heat. Add minced onion, and crushed garlic. Fry them until the onions become translucent.
  • Add chopped carrots and celery. Fry for about 5 minutes
  • Add dried oregano, basil, thyme and bay leaf. Fry for one minute.
  • Add vegetable broth and tomato cubes with their juices
  • Boil the mixture on a low fire; leave it for 10 minutes
  • Add chopped vegetable and let simmer for extra 10 – 15 minutes
  • Add salt and pepper to taste
  • Remove bay leaves before serving
  • Vegetable soup is now ready for serving.
